Unless you have been living under a rock, I am sure you have heard of the amazing benefits of chia seeds. These tiny seeds are packed full of protein, fibre and eight times more omega 3 than salmon!
what you may not know, is that when they are soaked in liquid, they expand into a yummy gelatinous pudding consistency which makes a filling and nutritious breakfast, or even a delicious dessert. There are countless flavours you can add to your chia pudding from chocolate to vanilla to berry, but one of my favourites is apple and cinnamon.
My Apple and Cinnamon Chia Pudding Recipe
Ingredients (one serve)
3 tbsp Chia Seeds
I cup of almond milk (or half almond and half coconut milk for something different!)
A dash of vanilla essence
Half a grated apple
6 drops of stevia liquid, or stevia powder to taste
1/2 tsp cinnamon
Method
Place the chia seeds in a small bowl and cover with the almond milk, giving it a good stir to break up any clumps. Let it rest for 10 to 15 minutes so that the seeds can absorb the liquid and swell up, but be sure to give it another mix or two within that time so that the consistency is even.
Add the stevia, vanilla essence, cinnamon and stir through.
Add the grated apple on top or stir through if you like.
